Dieu Donné Chardonnay 2019

The vines are situated high at 400m above sea level on steep southwest facing slopes. This tempers the sun, ensuring cool summer conditions and slow ripening of the grapes with high natural acids.
The soil is weathered granite with rocky topsoil, found only in this corner of the Franschhoek valley, called Greywack.
Hand harvested end of February in the cool morning.
Fermentation was started in tank and then let to barrels where it was left for twelve months. The lees was stirred up every second week in the first three months (batonage) and only partial Malo Lactic Fermentation was allowed. The wine was racked every four months.
Fermentation Temprature: 14°C
Tasting Notes:
A complex, full bodied Chardonnay with lemony flavours, complemented by vanilla from the wood. Aged for nine months in French oak barriques. (50% new) The wine reaches its prime at about 5 years.
Best Enjoyed:
Wonderful with vegetarian dishes. Enjoy this wine with a plate of oysters, rich fish (tuna, salmon), roast duck or turkey.
