Dieu Donné Cabernet Sauvignon 2018
Winemaker Gregory Siebrits
The vines are situated high at 550m above sea level on steep southwest facing slopes. This tempers the sun, ensuring cool summer conditions and slow ripening of the grapes with high natural acids.
The soil is weathered granite with rocky topsoil, found only in this corner of the Franschhoek valley, called Greywack.
Hand harvested mid March in the cool morning.
The wine was pumped over and macerated for twenty-one days on the skins and then let to barrels. MLF was completed in the barrels, and the wine was left to mature in French casks for eighteen months.
Fermentation Temprature: 28°C
Tasting Notes:
A full bodied, complex Cabernet Sauvignon with dense violet, blackcurrant, cassis character and earthy spicy flavours. Will reward those who resist temptation and explore the wine's maturation potential.
Best Enjoyed:
Great with beef, lamb and poultry
